Fall Favorites
This recipe comes from my cousin Deb in Alberta, and boy are they good....
Butterscotch Pumpkin Muffins
1 3/4 cups flour
1/2 cup packed brown sugar
1/2 cup white sugar
1/2 tsp. cloves
1/2 tsp. ginger
1/2 tsp. mace
1 tsp. cinnamon
1/4 tsp. baking powder
1/8 tsp. baking soda
2 large eggs
1 cup butterscotch chips
1/2 cup melted butter or margarine
1 cup canned pumpkin
pecans if desired
In a large bowl, mix flour, sugars, baking powder, soda and salt. Create a well in the centre of the mixture. In another bowl, whisk eggs, pumpkin and butter. Stir in the butterscotch chips and pecans and pour into the dry mixture. Fold together gently till the ingredients are just moistened. Do not overmix.
Preheat oven to 350 degrees F and bake for 20 - 25 minutes in muffin tins.
