Janet's Sweet Potato Cake
Yield: 9 x13 pan
2 cups whole wheat flour
1 cup rolled oats, oat bran, or "quick" oats
1/4 teaspoon salt
1 teaspoon soda
3 teaspoons cinnamon
4 eggs
1 cup honey
1/4 cup pure maple syrup (optional)
2 cups sweet potatoes mashed
1 teaspoon vanilla
1 cup oil
1/2 cup butter melted
1 cup pecans
Directions:
1. Preheat oven to 350 F
2. Mix dry ingredients
3. Blend wet ingredients together with a mixer or in a blender.
4. Add dry to wet ingredients and mix very well
5. Add the pecans
6. Bake in buttered 9 x 13 inch pan for 35-40 minutes
or in a carefully buttered bundt pan for 1 hour.
We like to serve this with a cream cheese maple frosting.
This is my recipe for the maple cream cheese frosting is
8 oz of cream cheese, softened
4 Tablespoons butter softened
1/4 cup maple syrup
enough powdered sugar to get the consistency you wish. I used maybe 1/4 cup today.
Cream the cheese and butter together, add the other ingredients and mix with electric mixer until smooth
