We are sticking to this eating healthy business and feeling better all the time. Now we are not strictly vegan but certainly vegetarian.
Tonight was a meal of lentils with eggplant, peppers, onions, garlic, tomatoes diced, and for spices I added some sea salt (a tiny bit) salt free Spike, and a liberal shake of turmeric and cilantro from the garden.
It was really yummy. We had that on top of Brown Basmati rice and had some quesadillas with herbed cheese. For dessert, we had a carob tofu pie which was yummy. Forgot to get a picture of it though.
Life without preservatives and corn syrup sure make you feel better. Give it a try !
