Poor Man's Zucchini "Crab" Cakes

Just mosey on over to the West Girls website Homestead Blessings to find this wonderful recipe. These are just yummy and a great way to use some of that never ending supply of zucchini that grows in the garden. I doubled the recipe so I can freeze the extra, that is if any are left to freeze.

I don't have ripe zuchinni yet, but when I do....I will be making these for sure..they sound wonderful. I even bought some old bay seasoning today...just to be ready!

we are getting closer to having a garden this fall and next spring-summer. Zucchini is on the list. This recipe will be on the list too! I will try baking them instead of frying. Happy 4th. Emily

I just pan fried them in a little bit of olive oil and they got a nice crispy texture to them without wasting lots of oil and at the same time consuming some good fat
