Sweet Potato Cake

Sweet Potato Cake was on the menu for tonight's dessert. Served warm from the oven with a simple cream cheese frosting, sweetened with a bit of pure maple syrup.
The mix for this cake is a sweet potato muffin mix purchased at Homestead Heritage in Elm Mott, Texas. An amazing Christian Community that we buy our corn meal from and other delightful items. There should be plenty of pictures of this community in the November archives of my blog. They have a huge Craft fair the weekend following Thanksgiving each year.
I made this mix into a cake rather than muffins and works out well. All natural ingredients go into their mixes.
Emery said "it sure hit the spot tonight" and I have to agree with him.
