Raisin and Peanut Carob No-Bakes

1/4 cup butter, I use Earth Balance
1/2 cup honey ( we have used maple syrup in place of the honey)
3/4 cup carob chips (chocolate chips could be used in place of the carob)
2 teaspoons vanilla
1/2 cup peanut butter

measure out the following ingredients in a large bowl

2 cups oats
1/2 cup raisins
1/2 cup peanuts

melt butter in medium pan on medium heat
add honey and remove from the heat
add, carob chips, vanilla, and peanut butter. Mix well until it is well blended
add this mixture to oats, raisins and peanuts.

Spread in a 9x9 inch pan. Chill and cut into 1 1/2 inch squares.
We also add pumpkin seeds, sunflower seeds, chopped dates, extra carob chips, any kind of nuts and sometimes we use chopped up candied ginger too.
You really can add what you want. I put in some dried blueberries and cherries in this time and it was yummy.
