Daiya Vegan Cheese and Sunshine Burgers

On a recent trip to one of our favorite Vegan restaurants, my grand-daughter had a grilled cheese sandwich, and she wanted me to take a taste and I was surprised at how good it was. I asked the waitress which kind of cheese they used and she told me it was something new, Daiya vegan cheese. It melted great and had wonderful flavor. Something you don't always find in combination when it comes to vegan cheeses.
Since that day, I have been buying it and enjoying the versatility and flavor of it and when I find a good thing, I like to share it with my readers.
The mozzarella is perfect for pizza, it melts, it stretches and it tastes fantastic and when it comes to pizza, I am super picky. Its gutta be good !
This vegan cheese is just so good, you could fool even the most vocal opponent of "fake" cheese.
We are able to buy it at our local health food store, which is a real blessing.
I had plans on taking a picture of the melted cheese on our burgers today, but we both were so anxious to eat them, that we got to them before I could snap a photo !
Another favorite for us, are Sunshine Burgers which are perfect with the Daiya Cheese

Several of my new friends here in KY are vegans. I prepared a meal for them today: lentil soup, home made bread and a salad. They showed me how to make almond butter for a spread. Its nice to know about good-tasing alternatives to our more conventional diet. We have access to a Mennonite bulk foods store which is a real blessing--I'll make a note of the vegan cheese for future meals with my friends. I'm still exploring what is available locally.

I told my daughter, who is lactose intolerant about the Daiya cheese & she's quite interested. Where do you buy it? We live east of McKinney, Texas.

I sent an e-mail to Daiya asking about the ingredients to their cheese products. Here's the key part of the response that arrived this evening (and I did thank them for providing it):
"Purified water, natural whole ground cassava and/or arrowroot flours, high oleic sunflower and/or safflower and/or identity-preserved high oleic canola oil, coconut oil and/or palm fruit oil, pea protein, salt, inactive yeast, vegetable glycerin, natural vegan flavors (derived from plants), xanthan gum, sunflower lecithin, natural vegan enzymes, natural vegan bacterial cultures, citric acid, natural color.

Wow... it's basically OIL... added FAT (over 50% total calories from FAT)... and what's worse, coconut and palm oils contain the highest percentage of saturated fat of ALL vegetable oils, a double-whammy to the circulatory system:
"Saturated fat is the main dietary cause of high blood cholesterol." (American Heart Association)

I am not too worried about the ingredients Rose since we don't eat tons of it and we don't have much fat in our diets. One eats and lives to their own conscience
